Ingredients (Makes 2 Wraps)

  • 1 medium sweet potato, peeled & cubed
  • ½ cup canned black beans, rinsed and drained
  • ¼ cup corn (fresh, canned, or frozen)
  • 2 tbsp diced red bell pepper
  • ½ tsp cumin
  • Pinch of salt & black pepper
  • 2 small whole wheat or spinach wraps
  • Optional toppings: mashed avocado, plain Greek yogurt, chopped parsley

Instructions

1️⃣ Boil or steam sweet potato cubes until soft (about 10–12 minutes). Mash lightly with a fork.
2️⃣ In a bowl, mix sweet potato, black beans, corn, bell pepper, cumin, salt, and pepper.
3️⃣ Warm the wraps briefly on a pan or in the microwave for easy folding.
4️⃣ Spoon the mixture into wraps. Add avocado or yogurt if using.
5️⃣ Roll and slice in half. Serve warm or room temperature.
