Ingredients (Serves 3-4)

 

  • 1 medium butternut squash, peeled and cubed
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 3 cups low-sodium vegetable or chicken broth
  • 1 tbsp olive oil
  • ½ tsp ground ginger (optional)
  • ½ tsp cinnamon (optional)
  • Salt and pepper to taste
  • Optional: a splash of milk or cream for extra creaminess

Instructions

 

 1. Sauté the onion and carrots in olive oil over medium heat until soft and fragrant.

2.  Add the butternut squash and broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes, or until vegetables are tender.

3.  Blend until smooth using a hand blender or countertop blender. Add ginger, cinnamon, and seasoning.

4. Stir in milk or cream if desired for a richer texture.

5.  Serve warm with a slice of whole grain bread or a sprinkle of pumpkin seeds.
