Ingredients (Makes 10-12 muffins)

 

  • 1 ½ cups rolled oats
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 1 cup pure pumpkin purée (not pie filling)
  • 2 eggs
  • ⅓ cup olive oil or avocado oil
  • ⅓ cup honey or maple syrup
  • 1 tsp vanilla extract
  • ¼ cup milk (or plant-based milk of choice)

Instructions

 

1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.

2. In a large bowl, whisk together oats, flour, baking soda, baking powder, cinnamon, nutmeg, and salt.

3. In another bowl, mix pumpkin purée, eggs, oil, honey/maple syrup, vanilla, and milk until smooth.

4. Combine the wet and dry ingredients and stir until just blended.

5. Fold in walnuts or raisins if desired.

6. Spoon batter evenly into muffin cups and bake for 20–25 minutes, or until a toothpick comes out clean.

 7. Cool for 10 minutes before serving.
