  • ¼ cup low-sodium chicken broth

Instructions

1.  Preheat oven to 375°F (190°C).

2.  In a small bowl, mix cranberries, honey (or maple syrup), olive oil, and rosemary.

3.  Place chicken in a baking dish and season lightly with salt and pepper.

4.  Pour the cranberry mixture and broth over the chicken.

5.  Cover with foil and bake for 25–30 minutes, or until the chicken is tender and fully cooked.

6. Remove the foil for the last 5 minutes to let the cranberries caramelize slightly.
