Ingredients (Serves 2-3)

  • 4 bone-in or boneless chicken thighs (skin removed for lighter option)

  • 2 tbsp olive oil

  • 1 tsp dried rosemary

  • 1 tsp dried thyme

  • 2 cloves garlic, minced (optional)

  • ¼ cup low-sodium chicken broth

  • Salt and pepper to taste

Instructions

1. Preheat oven to 375°F (190°C).
2. In a small bowl, mix olive oil, rosemary, thyme, garlic, salt, and pepper.
3. Rub the herb mixture evenly over the chicken thighs.
4.  Place chicken in a baking dish and pour broth around the base to keep the meat tender.
5. Cover loosely with foil and bake for 30–35 minutes, or until fully cooked.
6. Serve immediately for maximum freshness
