Creamy Vegetable Soup

Proper nutrition at any age is important to ensure a healthy and active lifestyle. However, as we age, a poor diet can have significant effects that put us at risk for disease.

This creamy vegetable soup is nutritious (using whole milk instead of cream!) and delicious with a variety of vegetables!

Creamy Vegetable Soup

Ingredients

  • 2 tablespoons Butter
  • 1 tablespoon Olive Oil
  • ½ cup Onions chopped
  • ½ cup Celery chopped
  • 1 cup Carrots chopped
  • 1 tablespoon Garlic minced
  • 1 cup Green Beans chopped
  • 1 cup Mushrooms sliced
  • 1 cup Broccoli Florets
  • 1 cup Corn Kernels
  • 1 teaspoon Thyme dried
  • 1 teaspoon Oregano dried
  • 3 tablespoons All Purpose Flour
  • 4 cups Whole Milk
  • Salt and Pepper to taste

Directions

  1. Heat butter and olive oil in a skillet and add onions, celery and carrots. Cook for a few minutes till the onions soften, making sure not to brown them. Add the garlic, beans, mushrooms, broccoli and corn and saute for 2-3 minutes. Mix in the thyme and oregano and add the flour.
  2. Add the flour along with thyme and oregano and cook the flour with veggies for a minute and a half. Add the whole milk slowly, while stirring continuously. Keep stirring while you bring this to a boil, and then reduce to a simmer.
  3. Add salt and pepper and let everything simmer for 6-7 minutes or till the soup thickens. Add a little broth or more milk to thin it out if its too thick for you.
  4. Serve hot on its own or with a fresh whole grain roll.

Make Some Noise on NYE!

Ever wonder what to do with all that leftover gift wrapping and boxes?!

Usher in the new year with this fun New Years’ Eve noisemaker craft using those shiny festive wrapping paper scraps, some household items and a little creativity.

Paddle Noisemaker Craft

Materials

  • Cardboard
  • String or twine
  • Wrapping paper scraps
  • Craft glue
  • “Noisemakers”, such as beads, buttons, bells capable of threading string into
  • Craft sticks (wooden popsicle sticks or wider)
  • Scissors

Instructions

Follow the directions below or watch this video for similar instructions.

  1. Using cardboard, draw 2 circles approx. the size of a small to medium bowl. Carefully cut out the circle.
  2. Using the wrapping paper, glue on to one side of each circle. You may want to cover the entire circle with one piece of wrapping paper or use small torn scraps and create a mosaic! Set aside to dry.
  3. Using a single hole punching tool, cut 3 – 4 holes along the left and right edge of the circles. To make sure the holes match, you can use the first circle and trace the holes onto the 2nd circle.
  4. Line up your circles on top of one another (decorated side facing outwards). Make sure the holes line up. Create an opening and place the craft stick between the two circles to create a handle at the bottom. Using glue, adhere part of the stick to the plain inside of the circles. Let dry.
  5. Cut string to measure double the length of the circles you created. Measure and cut as many strings as you have holes on your noisemaker. Thread each string halfway into each hole. This will help fasten the circles together too!
  6. Begin to thread your noisemaking accessories, such as beads, buttons, bells, etc. on each string. Tie a knot at the end of each string.

Now you are ready to make some noise! Simply hold the noisemaker’s handle and turn, twist, or wave the paddle and let the bells, buttons or beads make a sound against the decorated cardboard!

Seated Chair Exercises

As you gather during the holidays or when visiting elderly loved ones any time of year, keeping active is key to ensuring continued mobility and flexibility.

We have researched 5 exercises that could help you, a loved one, or a person in your care. These are low-impact seated chair exercises, however, always consult your doctor before adding any range of motion or exercise activities to your routine.

Overhead Bend & Reach

  1. Gently raise both arms above your head.
  2. Lower your right arm and lean to the right. Feel the stretch in your left side.
  3. Hold for at least 15 seconds.
  4. Return to your original position with your arms over you head.
  5. Drop your left arm and lean to the left.
  6. Repeat 2 to 4 times on each side.

Shoulder Blade Squeeze

  1. Lift your arms near the level of your shoulders with your elbows. pointed straight out to the side.
  2. Bring your elbows back while you squeeze your shoulder blades together. Don’t left or shrug your shoulders as you are squeezing.
  3. Hold for 6 seconds.
  4. Repeat 8 to 12 times.

Knee Extension

  1. Straighten and lift one leg, and hold while you slowly count to 5. Be sure you don’t lock your knee.
  2. Slowly lower your leg back down.
  3. Repeat 8 to 12 times.
  4. Do the exercise with the other leg.

Neck Rotation

  1. Keeping your chin level, turn nyour head to the left, and hold for at least 15 seconds.
  2. Turn your head to the right and hold for at least 15 seconds.
  3. Repeat 2 to 4 times for each side.

Marching in Place

  1. Sit with your feet slightly apart, and keep your hands at the edge of your chair or on the armrests.
  2. March in place, lifting your knees, one at a time, high towards the ceiling. Remember to breathe normally.
  3. Keep marcching in a smooth rhythm for 1 minute. Work up to marching 5 minutes or longer.

Spinach & Ricotta Pinwheels

This fun and simple appetizer is not only nutritious but delicious! Before baking, arrange each pinwheel in the shape of a Christmas tree and you have instant festive decor!

Ingredients

  • 1 teaspoon vegetable oil for frying
  • 2 red onions, chopped
  • 8 cups fresh spinach
  • salt and freshly ground black pepper
  • 1 pinch ground nutmeg
  • 9 ounces fresh ricotta cheese
  • 1 tablespoon grated Parmesan cheese
  • 1 sheet frozen puff pastry, thawed
  • 1 egg, beaten
  • 4 multi-colored cherry tomatoes, halved, or more to taste

Directions

  1. Heat oil in a large pan over medium heat and saute onions until soft and translucent. Add spinach, salt, and pepper and briefly saute while stirring constantly, 2 to 3 minutes.. Cover and cook until spinach is wilted, 5 to 7 minutes. Remove lid after 5 minutes and allow cooking liquid to evaporate. Remove from stove and cool completely.
  2. Chop spinach mixture and combine with ricotta and Parmesan cheese in a bowl. Season with salt, pepper, and nutmeg.
  3. Roll out puff pastry sheet and evenly cover with spinach-cheese mixture to within 1/2 inch of the edges. Tightly roll up sheet lengthwise and press edges tightly together. Wrap in plastic wrap and cool in refrigerator for at least 1 hour.
  4. Preheat oven to 400 degrees F (200 degrees C). Cover a baking sheet with parchment paper.
  5. Slice pastry log into 3/4-inch slices so you have 16 to 22 pinwheels. Lay puff pastry pinwheels in the shape of a Christmas tree. The lowest row should consist of 6 pinwheels the second row 5 pinwheels, etc. If you end up with 16 pinwheels, start with 5 pinwheels in the lowest row. Place the last wheel on the bottom to make the stem. Brush with egg.
  6. Bake in preheated oven until wheels are lightly browned and puffed up, 20 to 25 minutes.

Decorate with cherry tomatoes for Christmas tree ornaments!
