Looking for a savoury breakfast, far from the old cereal and milk combination? Try this sausage and kale dish with a lightly fried egg!
Ingredients:

1 cup fresh kale, loosely chopped

4 cremini mushrooms, diced

1 sausage, lean, sliced

2 tsp olive oil or 1 tbsp vegetable oil

1 tsp dried oregano

Salt & pepper to taste

1 egg

1 slice sourdough bread

**Optional – for a heartier bowl, add green bell peppers and onions
Method

Heat oil in a pan over medium-high heat

Saute sausage, until lightly browned. Add the mushrooms and kale (and other vegetables of your choice), and saute until cooked, reducing heat half-way through. Add salt and pepper to taste.

In a separate pan, spray with non-stick spray and heat over medium-high heat. Crack one egg and fry until your desired cook. Add salt and pepper to taste.

Once cooked, place sausage and kale mixture in a bowl and top with the freshly fried egg. Serve with a side of lightly toasted sourdough bread, perfect for dipping in the egg yolk!
