This easy recipe calls for fresh vegetables, a burst of basil flavour and a favourite – cheese!

Ingredients

1/2 cup Feta cheese, crumbled

2 Zucchini, medium-sized

1/2 Button Mushrooms, sliced

1 cup Red Bell Peppers, diced

1 tbsp Garlic, minced

1/2 tbsp Dried Oregano

6 leaves Fresh Basil

2 tbsp Olive Oil

Salt & Pepper to taste
Directions

Preheat oven to 375°F.

Place a skillet over low heat and pour in 1 tbsp of olive oil. Add the bell peppers, mushrooms, garlic, oregano, basil, salt and pepper. Saute for about 5 mins and set aside.

Cut zucchini into 1/2-inch thick slices diagonally, and coat a baking pan with the remaining olive oil. Add the zucchini into the baking pan, placing them side by side to cover the pan.

Carefully spoon the sauteed vegetable mixture over the zucchini and sprinkle the feta cheese on top.

Cove the baking dish with foil and place it in the oven.

Bake for 45minutes or until the zucchini is tender.
Serve with your favourite protein or pasta dish!
