- 2 tsp fresh Thyme Leaves

- 1 tsp salt

- 2 tbsp balsamic vinegar

- 2 tbsp Maple Syrup

- 2 tsp chopped fresh Tarragon leaves

- 8 cups Mixed Salad Greens

- 1/4 cup dried cranberries (optional)

- 3/4 cup crumbled Goat Cheese (Chèvre)


Instructions:

1. In a large bowl, combine sweet potato and onion. Add 2 tbsp of oil, thyme, and 1/2 tsp of salt. Toss gently to coat the vegetables.


2. Spread the coated vegetables evenly over 2 large oiled baking sheets.


3. Roast the vegetables in a preheated 375°F oven for approximately 30 minutes, or until the sweet potatoes turn golden and fork-tender. Remember to stir them halfway through the cooking process.


4. While the vegetables are roasting, whisk together the remaining 2 tbsp of oil, balsamic vinegar, maple syrup, chopped tarragon leaves, and remaining 1/2 tsp salt in a small bowl.
