Shepherd's Pie for St. Paddy!

Happy St. Patrick's Day!


We thought we would celebrate the occasion with a delicious, savoury Shepherd's Pie!



Shepherd's Pie

Serves 6 - 8 people


Ingredients:

  • 1lb Lean Ground Beef

  • 1 large Onion, diced

  • 2 tbsp Vegetable Oil

  • 1 tbsp each Salt and Pepper, or to taste

  • 1/2 tsp. Allspice

  • ¼ cup Peas, frozen

  • ¼ cup Carrots or Corn, frozen

  • 8 Medium Potatoes, mashed with milk and butter

  • 1 Egg, whisked

  • 2 – 3 tbsp. Breadcrumbs


Method:


Preheat oven to 385°

  1. Prepare the potatoes by washing, peeling, and cutting them into cubes. Place them in a pot of water and 1 tbsp of salt. Boil until almost soft, remove from stove and drain. Add ½ cup of milk (or more if needed), 1/4 cup of salted butter, salt and pepper to taste. Mash until smooth and free of lumps. Cover and set aside for later use.

  2. In a small pot, fry ground beef with 1 tbsp. vegetable oil, when brown add the chopped onions and let cook on medium heat until meat is tender (about 8 mins). Add carrots and peas, salt, pepper, and allspice, mix well and cook for another 8 minutes.

  3. Take a large glass/or metal baking tray, spread 1 tbsp. shortening – or use cooking spray to coat. Begin by spreading a layer of mashed potatoes (about half of the total amount made), then add the meat mixture and top with another layer of the remaining mashed potatoes. Take a fork and run it slightly back and forth on top of the potatoes, to create ridges. Pour the beaten egg, and sprinkle Breadcrumbs on top. The egg mixture will sink into the ridges and bind.

  4. Bake for 45 minutes or until the top layer appears solid in texture with slightly browned edges. Set oven to broil until golden brown. Remove from oven and let sit until ready to serve.


Enjoy this with a green salad, and your favourite condiments!
