Cooler days don't always call for heavy meals. Try this delicious, light, and nutritious salmon dish any day of the year!
Salmon with Quinoa Dish
Ingredients
1/2 cup dry quinoa
6-8 fresh cherry tomatoes
2 tsp olive oil
1 green onion stalk, chopped fine
2 salmon fillets
1/2 cup diced cremini mushrooms
Juice from half a lemon
For marinade
1 tbsp maple syrup
1/4 cup soy sauce
1 tsp vegetable oil
Salt and pepper to taste
1 tbsp chopped, fresh parsley
1/4 tsp dried thyme
Directions
Mix all marinade ingredients together and add to salmon. Let sit at least 30min.
Preheat oven to 400°F
Cook quinoa according to package and keep warm.
Place salmon fillets in a baking tray lined with foil or parchment paper and cook in a preheated oven for about 15 - 20 mins.
Saute tomatoes in olive oil, adding salt to taste. Saute until lightly seared and tomatoes begin to pull apart. Remove from pan. Add mushrooms to the pan and saute until cooked.
Add tomatoes, mushrooms, green onion, and lemon juice to the warmed quinoa. Add salt and pepper to taste.
Once salmon is fully cooked, serve with the side of quinoa and enjoy!
