What fruit comes to mind when you think about Summer?
Watermelon is probably the most popular fruit that has designated itself as the symbol of Summer! You can serve it wedged, cubed on a skewer, as a gazpacho (chilled soup), or like in this recipe, as a salad!
Watermelon Feta & Mint Salad
Ingredients
2 - 4 cups cubed seedless watermelon (depending on servings)
1/2 cup crumbled feta cheese
2 tablespoons chopped fresh mint
1/4 cup of fresh blueberries
A sprinkle of salt
1 - 2 tbsp Balsamic vinegar or glaze
Directions
In a bowl, place cubed watermelon, crumbled feta cheese and blueberries. Drizzle the balsamic glaze on top. Sprinkle the salt and garnish with freshly chopped mint leaves. Serve right away on its own or with your favourite protein, such as chicken or lamb.
