Pouding Chomeur



Celebrate all things Canada with this delicious and healthy version of a French Canadian dessert! "Pudding" or "Pouding", no matter how you say it, this delicious upside-down caramel cake is a crowd pleaser!



Pouding Chomeur (a.k.a "Poor Man's Pudding") was created by female factory workers during the Great Depression in Quebec, Canada. Becoming popular again for decades, due to the rich maple syrup flavours gathered in the region and across Canada, this dessert is light and sweet and served with whipped cream!






Pouding Chomeur


Ingredients

  • 1 tsp baking powder

  • 1½ cup(s) all-purpose flour

  • 7 Tbsp, divided unsalted butter

  • ½ cup sugar

  • 1 tsp vanilla extract

  • 1 large egg

  • 1 cup fat-free skim milk

  • ⅔ cup maple syrup

  • ⅔ cup unpacked dark brown sugar

  • ½ cup boiling water

  • 24 Tbsp aerosol whipped cream

Method

  1. Preheat the oven to 325º. Prepare a 9” x 13” baking dish with cooking spray and set aside.

  2. Sift flour and baking powder. Set aside.

  3. Using an electric mixer, cream 4 Tbsp of butter with sugar until light and fluffy.

  4. Add vanilla extract and egg and beat until well combined.

  5. In alternating batches, add flour mixture and milk, blending by hand until just combined (no lumps.) The dough will be a little sticky.

  6. Turn batter into prepared baking dish and smooth top.

  7. In a small saucepan, combine 3 Tbsp of butter, maple syrup, brown sugar, and boiling water. Boil sauce for 1 minute or until slightly syrupy.

  8. Carefully pour the sauce over the top of the batter.

  9. Bake for 45 minutes until the top is golden*. Cool and cut into 24 square.

  10. Serve with 1Tbsp of whipped cream per piece.
