Overnight Chia Pudding

If you're one to scroll through a number of colourful, healthy, exciting new recipes, you may have seen the ingredient "chia seeds" come up a lot; but many of us have never heard of them or know their benefits!


Chia seeds come from the desert plant Salvia hispanica, a member of the mint family. These tiny seeds pack some BIG nutrition!


They’re packed with fiber, protein, omega-3 fatty acids, and various micronutrients such as calcium and magnesium. Chia seeds are also high in antioxidants. These compounds help protect the seed’s delicate fats while also offering health benefits to humans.


So, if you're looking for ways to gain helpful nutrients into your diet, consider incorporating chia seeds into your next meal or snack. They’re a great addition to smoothies, oatmeal, yogurt, baked goods, and this delicious Overnight Chia Pudding!



Overnight Chia Pudding

Serves 2 - 4


Ingredients

1/4 cup chia seeds

1 cup vanilla-flavoured unsweetened almond milk

2 tbsp pure maple syrup

1 tsp pure vanilla extract

Pinch of salt

1-pint blueberries, raspberries, or strawberries (hulled and chopped)


Instructions


In a medium bowl gently whisk the almond milk, 2 tablespoons maple syrup, the vanilla, and 1/8 of a teaspoon of salt until just blended.


Whisk in the chia seeds; let stand for 30 minutes. Stir occasionally to distribute the seeds if they have settled. Cover and refrigerate overnight.


The next day, in a medium bowl, toss the mixed berries. Spoon the pudding into bowls or glasses then place the Berry mixture on top and serve. Enjoy!
