A staple in Middle Eastern dishes, Mujadara - or Lentils with Rice and Onions, is quick, easy, and packed with protein!
Using 3 simple main ingredients, Mujadara is an inexpensive vegetarian, vegan, and gluten-free option for any dietary needs...and it's delicious too! Often served with pickled turnips, tomato and cucumber salad, or even yogurt, you won't be disappointed with this tasty dish!
Ingredients
1-1/2 cups of Green Lentils
½ cup White Rice
1 medium-sized Onion, diced
2 Tbsp. Olive oil
½ tsp Salt.
Method
Clean and wash Lentils before cooking.
Place lentils in a pot of cold water, just enough to cover the lentils, and boil.
Stir Lentils regularly so as not to stick, adding water when necessary, so as not to dry out before it is done.
In a pan, fry onions in olive oil, and put them aside.
In a bowl rinse the rice in warm water and let stand till used.
When Lentils are softened, add Salt and Rice and cook on low heat, stirring regularly and allowing it to dry out to desired texture
When Rice is cooked, add the fried onions and stir lightly - or serve with onions on top as a garnish. Salt to taste, if needed.
Lentils and Rice are now ready to eat either hot or cold. Enjoy with some fried Potatoes, a salad, Olives, and Pickles.
