Chickpea “egg salad” Sandwich
Makes about 3-4 sandwiches
1 can (15 oz) chickpeas (garbanzo beans), drained and rinsed
1/4 cup hummus, store-bought or homemade
1-2 tablespoons mustard (stoneground or dijon)
1/2 cup celery, sliced
1/2 cup carrots, diced
1/4-1/3 cup scallions, sliced
sea salt & cracked pepper, to taste
dash of garlic powder
juice of 1 lemon, optional
paprika/smoked paprika, garnish
Drain and rinse your chickpeas, place in a medium-size bowl and roughly mash with a fork or potato masher.
Add the remaining ingredients and combine. Add more hummus for a creamier texture. Season to taste.
Serve on whole-grain or your choice of bread, a bed of leafy greens, or scoop up with sliced vegetables like cucumbers, bell peppers, celery sticks.
*Note: If the hummus is too thick, add about 1-2 teaspoons of water.
