Chicken Chili
Makes 6 servings

Ingredients

2 tsp vegetable oil

1-1/2 cups white onion, diced

2 cups mushrooms, chopped

1 cup sweet green pepper, diced

1 cup carrots, chopped

2 tsp minced garlic
-
12oz or 3 chicken breasts, boneless skinless, cut into 1″ cubes

1/4 cup cornstarch
-
2 cups tomato sauce
-
1 cup canned chickpeas, drained

1 cup chicken stock
-
2 tsp basil
-
2 tsp chili powder *optional
-
1 tsp oregano

1/3 cup parsley, chopped
Method

Chop and prepare all ingredients and set aside.

Cube chicken in approx. 1″ pieces and set aside.

Heat oil in a large pot over medium0high heat and add onions. Cook until translucent.

Stir in mushrooms and other vegetables and cook, stirring often, for about 10 minutes.

Dust chicken with cornstarch and add to vegetable mixture, stirring often.

Add tomato sauce, broth, chickpeas and all remaining ingredients. Stir to blend.

Cover and let simmer on low for approx. 30 – 35 minutes or until cooked.
