A tradition in many families is making delicious sweet treats and desserts for special occasions – like this one from our own family! This apple cake dessert is light, soft, and full of sweetness! A family favourite!

Auntie Nadia’s Apple Cake
Ingredients

3 Apples, peeled, cored

1 cup Flour

1/2 cup Vegetable oil
-
3/4 cup Sugar
-
3 Eggs
-
1 tsp Baking powder
-
1 tbsp Lemon juice, divided
-
1 tsp Vanilla extract
-
1 tsp Cinnamon + more for “garnish”
Directions

Preheat oven to 350°F

Prepare the apples by peeling, coring, and cutting them into thin slices or chunks. Sprinkle with cinnamon, and toss in 1/2 tbsp of lemon juice. Set aside.

In a large bowl, mix flour, oil, sugar, eggs, baking powder, remaining lemon juice, and vanilla. Mix well with a hand mixer until smooth and combined.

In a large glass baking dish (approx. 9″ x 13″), spray with non-stick spray.

Place the apples along the bottom of the dish, spreading them out to fill it.

Pour the cake batter over the apples to cover completely. Sprinkle ground cinnamon on top.

Bake in the oven for approx. 40 minutes or until the top and edges are golden brown.

Let cool before serving.
Serve this delicious cake with a scoop of vanilla ice cream or on its own with tea or coffee!
